Ingredients
1lbs of Butter
8ozs Sugar
8ozs Powder Sugar
.25ozs Salt
4ozs Eggs
.25ozs Vanilla

Instructions Creaming Method
Scale ingredients accurately. Have all ingredients at room temperature.
Place the fat, salt, and spices in the mixing bowl. With the paddle attachment, cream these ingredients at low speeds partway mixing, stop the machine and scrape down the bowl to ensure mixing.
For light cookies, cream until the mix is light and fluffy, in order to incorporate more air for leavening. For denser cookies, blend to a smooth past, but do not cream until light.
Add the eggs and Liquid, if and blend in low speed.
Sift in the flour and leavening. Mix until just combined. Do not overmix or gluten will develop. 6. Take the dough out the bowl and place on a marble board and knead the dough until is sticky. 7. Wrap the dough in Saran wraps it can go into the fridge for an hour or freeze for three mounts. 8. Ones the dough is nice and firm rolled out to your thickness and used a cookie cutter to cut out your cookie place on a cookie sheet bake at 350 for 11 to 12 minutes.
